- For the Chilli Nam Jim Jaew Sauce
- 2 Tsp Dry Chilli Flakes
- 6 Tsp Fish Sauce
- 2 Tsp Caster Sugar
- Fresh Squeeze juice from 1 lime (can use 2 Tsp bottled if not available)
- 1 Tsp Palm Sugar (if cannot find use soft brown sugar or more caster)
- 1 Tsp Toasted ground sticky rice (optional)
- 2 Tsp Warm Water
- 1 Finely chopped top of spring onine (optional)
- Half Small red onion finely Sliced (Optional)

- For the Sauce put all ingredients into a small ball and mix about 30 mins before serving - you can add more or less of anything to personal taste - I just like really SPICY :P - I put this sauce on Grilled chicken, Pork Beef just about anything.
